Alfred's Recipe : Chicken Nachos

Sometime in the 1990s, there used to be this restaurant in Singapore called the American Chili's Grill & Bar Restaurant. This American restaurant was brought in by the same group of people who were running the Spageddie.

3 outlets stood at Boat Quay, Marina LeisurePlex and Orchard Parade Hotel up to about a decade ago and then they just disappeared from the face of the earth suddenly. From what I heard, they were doing quite well at that time so I really don't know why they pulled out of Singapore.

But they have established a couple of branches across the causeway so if you happen to travel to Malaysia, you may like to look out for it. Now, why I'm mentioning this restaurant is because here is where I tasted the best Chicken Nachos ever.

While I was growing up, I never liked tortilla chips. I mean it is not really that bad but I would rather be munching potato chips simply because potato chips taste better in all those msg/salt flavouring. Tortilla chips, it just taste like punching tapioca chips, if you know what I mean.

Now we all know that tortilla chips are made of corn and in certain places, they're called corn chips. It is essentially Tex Mex or Mexican kind of staple where in every tables in any restaurants there, it is a must-have appetiser. It's just like if you were to go to a Chinese restaurant, then obviously you must be eating anything you ordered with rice.

Chicken Nachos is essentially tortilla chips topped with chicken pieces, cheese, baked beans, salami and jalapenos(pickled green chilies) and then served with sour cream, tomato salsa, guacamole(avocado spread). Fwah! I tell you, this combination is so shiok that whenever I see this on the menu at any restaurant I would order it but sadly none has come close to what I've tasted at American Chilis. This dish at the American Chilis can attain the level of shiokness that I didn't know any dish with tortilla chips can.

When I was staying in Perth, I was lucky enough to have an American housemate who once worked as a chef back in America. It's from him that I learnt how to make this mouthwatering dish and it is really really simple to make so today I'm going to share with you the recipe I know.

Ingredients:
1 pack fajita seasoning
200-300 grams of chicken breast
1 block velveeta cheese
300-500 grams of salami
10 jalapenos
1 can baked beans
1 can tomato salsa
1 cup sour sream
1 bottle guacamole
1 spring onion(chopped)
1 pack plain tortilla chips

Directions:
1. Marinate fajita seasoning with chicken and grill it till slight charred.
2. Cut chicken into slice.
2. Pan fry salami until crisp.
3. Melt velveeta cheese into a pot.
4. Spread tortilla chips evenly on a tray.
5. Spread slices of chicken on chips
6. Spread baked beans evenly on chicken.
7. Spread cheese evenly on chicken.
8. Mash salami and sprinkle evenly on cheese
9. Slice jalapeno into halves and sprinkle on cheese evenly.
10. Sprinkle chopped spring onion on cheese evenly.
11. Go under griller for approximately 3-5 mins.
12. 1 spoonful of salsa + sourcream + guacamole at every corner of the tray

This appetizer is good enough for at least 4 person.

I defintely remember CHILLIS restaurant in the 90s and their food serving is relly huge !
you can basically share the food with someone else and still not able to finish it.

Tortilla chips with melted cheddar cheese and sur cream is one of the best tasting food ever!
it also is very delicious with minced beef instead of chicken.

I am a great fan of Mexican food but unforunately, the only place i knew in Singapore that served nice Mexican food is Margarita at Dempsey Road. I have not been there before and it is one of my MUST TRY place in future.

Over in Sydney, there are a few Mexican restaurants and my favourite is Montezuma (http://www.montezumas.com.au/). I tried and fell in love with them when my good Friend, Anthony, brought me to the Brisbane outlet in 2002. they have outlets everywhere in Australia and be sure to try it out.
